There are endless ways to enjoy your seafood and we wanted to share a couple of recipes to get you started.
Sardines are one of the most underrated fish around. They are rich in flavour, afforable and good for you (they’re packed with heart-healthy omega 3’s). They’re also a fast-breeding and sustainably fished species.
Lemon, Parsley & Parmesan Crusted Sardines
Ingredients
- 200g packet of southern sardines, natural sardine fillets
- Zest of 1 lemon
- 1 Tbsp Chopped parsley
- 20g Grated Parmesan
- 100g Panko Crumbs (any crumbs will do if you don’t have panko crumbs)
- 1 Egg
- Flour for dusting
- Salt and pepper
Method
- Create the crumb coating by mixing the breadcrumbs, lemon zest, parsley, salt and pepper
- Flour the sardines and then dip into the beaten egg
- Then press the sardine fillets into the crumb mix making sure the fillets are well coated
- Shallow fry in olive oil until golden brown
- Place on rack or plate to drain then serve with garlic aioli (or your favourite dipping sauce)
- Enjoy these tasty, golden treats
Silver Flounder (Nelusetta ayraud) is another underrated fish, with its sweet, firm, white flesh it is a real hit with any crowd, even those who think they don’t like fish!
Easy Buttered Silver Flounder
Ingredients
- Silver flounder fillets
- Melted Butter
- Lemon Juice
- Chopped Parsley
Method
- Butter tray and place fish flesh side up
- Brush with melted butter add lemon juice and season
- Place under the grill on high until just cooked
- Serve on a plate with pan juices and sprinkle with parsley
Silver Flounder in homemade tomato sauce
Ingredients
- Silver flounder fillets
- ½ Onion finely diced
- 1 Garlic clove diced
- 440g tin diced tomatoes
- 1-2 tomatoes diced
- Olive oil
- Salt and pepper
- Baby capers
Method
- Gently soften onion and garlic in a pan with olive oil until soft (10 – 15 minutes stirring)
- Add tomato, cover and cook for 20 mins on medium/low
- Cover the base of your pan or tray with the tomato sauce, add chopped basil and parsley, then place the fish fillet on top
- Drizzle with olive oil, season and add baby capers
- Bake in the oven or place under the grill on high until golden
- Serve with boiled baby potato and green leaf salad
